The Iberian lagarto is understood as the meat piece attached between the spine and the back. It is a very elongated, narrow piece, exclusively muscular and constituted only by the iliocostal muscle.

The fat covers both sides, although in greater quantity on the lateral side. It will proceed to the removal of this grease for the preparation of the piece. The medial face separates from its intersection in the ribs.

Also called "loin cord" is a long thin strip of meat.
