The Iberian presa is one of the most veined cuts with abundant intramuscular fat, so it is very tasty and juicy. The presence of infiltrated fat is homogeneous and well distributed.

The Iberian presa is a piece of meat that is placed between the head of the loin and the shoulder, which could be considered as the "hombro"(shoulder) of the pig. As it is an area of great mobility, it is a meat with a lot of fiber, juicy and nutritious. It is usually cooked on the pan or especially grilled.

The presa coming from our Iberian pigs has a very noticeable veining, with marbled aspect, of intense color and, once elaborated, its texture is very pleasant, with great juiciness and a characteristic flavor derived from the system of breeding and feeding of the animals, which makes it a real delicacy.
