It is one of the parts of the pig most valued, even more so because of the scarcity of the product, because of a large pig as soon as they leave pieces of 250 grams. It is located in what could be called the armpit of the pig and the best way to cook the Iberian secreto is to roast it, grilled it or on a barbecue, simply adding salt.
It is a meat that, having enough marbled fat and infiltrated in the piece, is very tasty and juicy, so it requires few additives. Especially from our Iberian pigs, whose natural diet makes the texture and taste of the meat sublime.
